For the turkey steaks:

Oil for greasing

4 turkey steaks

Salt and freshly ground black pepper

125g/5oz dried white breadcrumbs

65g/2 ½ oz Gruyere cheese, grated

65g/2 ½ oz ground walnuts

125g/5oz butter, softened

Chopped walnuts and parsley sprigs to garnish

For the Madeira jus:

200ml/7floz Madeira

2 tsp concentrated liquid beef stock

50g/2oz unsalted butter

Method Method
  1. Preheat the oven to 200 C/ 400 F/ Gas Mark 6. Lightly grease a large baking tray with a little oil. Arrange the turkey steaks onto the tray and season each with salt and pepper.
  2. Place the breadcrumbs, cheese and walnuts together in a food processor and quickly blend until well mixed. Add the butter and blend until the butter comes together.
  3. Divide the mixture into 4 equal parts and top each turkey steak. Press the topping down lightly to cover the steaks right to the edges and smooth over. Bake on the top shelf of the oven for 15 minutes or until the turkey has cooked through and the topping is lightly golden.
  4. Bring half the Madeira to the boil in a saucepan and simmer until reduced by half. Add the remaining Madeira, return to the boil then simmer until reduced by half again.
  5. Remove the saucepan from the heat and stir in the stock. Gradually whisk in the butter a little at a time until blended. Return to the heat and simmer, stirring, until the jus has thickened slightly and is glossy.
  6. Serve the walnut crusted turkey steaks with a sprinkling of chopped walnuts. Spoon over the Madeira jus and garnish with a few sprigs of parsley.
