4 Turkey steaks

Juice of one lemon

Olive oil

Coriander and parsley finely chopped

Crystal salt
To serve

Fresh green salad.
Method Method
  1. Place the steaks on a plate, cover them in a little olive oil and massage it in.
  2. Sprinkle the parsley over the steaks, pat it in and add salt and a bit more oil, patting ot down again.
  3. Add the steaks to a hot griddle. Herb side down, add some oil to the top of the steak and massage in, adding a little more aslt.
  4. Cook the steaks for just over a minute on each side.
  5. Turn off the stove but leave the steaks in the pan for a few more seconds, making sure they are cooked properly.
  6. Squeeze the lemon juice over the steaks whilst they’re in the pan.
  7. Remove steaks and place on a serving dish.
  8. Drizzle with a little olive oil, season and little more lemon juice.
  9. Garnish with the fresh corriander
