For the turkey steaks:
25g/1oz butter, melted
4 turkey steaks
Salt and freshly ground black pepper
4 sage leaves
2 slices prosciutto ham
Deep fried sage leaves to garnish
For the Marsala jus:
200ml/7floz Marsala
2 tsp concentrated liquid beef stock
50g/2oz unsalted butter

Method
Method
Preheat the oven to 200 C/400 F/Gas Mark 6. Lightly grease a large baking tray with a little of the melted butter. Arrange the turkey steaks onto the tray and season each with salt and pepper.
Place a sage leaf on top of each turkey steak and lay half a slice of the ham over to cover. Brush each with a little melted butter. Bake on the top shelf of the oven for 10 minutes or until the turkey has cooked through.
Bring half the Marsala to the boil in a saucepan and simmer until reduced by half. Add the remaining Marsala, return to the boil then simmer until reduced by half again.
Remove the saucepan from the heat and stir in the stock. Gradually whisk in the butter a little at a time until blended. Return to the heat and simmer, stirring, until the jus has thickened slightly and is glossy.
Serve the turkey steaks with the Marsala jus and garnish with deep fried sage leaves.
