4 turkey steaks

Salt and freshly ground black pepper

100g/4oz dried white breadcrumbs

1 tbsp rosemary, chopped

2 tbsp plain flour

1 large egg, beaten

50g/2oz butter

2 tbsp freshly grated Parmesan cheese

Sprigs of rosemary and roasted cherry vine tomatoes
To serve

Method Method
  1. Place a turkey steak between 2 large sheets of food wrap. Using a rolling pin gently bash the turkey steak out thinly to about 5mm thick. Season with salt and pepper and repeat with the remaining turkey steaks.
  2. Mix the breadcrumbs with the rosemary and place on a large plate. Place the flour and egg onto separate plates.
  3. Take a turkey steak and first coat in the flour, then the egg and finally the breadcrumbs. Repeat with all the turkey steaks.
  4. Heat the butter in a large frying pan over a medium to high heat. Fry each coated turkey steak, one at a time, for about 1 minute each side until golden.
  5. Sprinkle Parmesan cheese over each cooked turkey steak and serve with sprigs of fresh rosemary and roasted cherry tomatoes.
