Turkey curry shepherds pie
Essential Ingredient:
Turkey Mince
1 tbsp sunflower oil

500g lean turkey mince

1 onion, finely chopped

1 inch cube ginger, finely chopped

3 cloves garlic, finely chopped

2 tsp hot curry powder

400g tin chopped tomatoes

450ml water

6 finger green chillies, finely chopped

1 tsp garam masala

1 tsp salt

4 large sweet potatoes

10 white potatoes

Freshly ground black pepper

Fresh coriander

Knob butter

To serve:
Serve with a selection of vegetables.
This turkey recipe from My random blurb is a spicy twist on the classic.
  1. Fry the mince in the oil until cooked over a med-high heat approx. 5-10 minutes
  2. Remove from the pan, drain and set aside
  3. Fry the onion, ginger, garlic and chilli until soft
  4. Add the spices and fry for 2 minutes
  5. Add the mince and stir well
  6. Add the tin of chopped tomatoes and the water
  7. Boil at a high temperature, and stir frequently until the mixture is reduced and thick
  8. Add to a glass cooking dish
  9. Chop the white and sweet potatoes into small chunks and boil in lightly salted water (in separate pans) until soft enough to mash
  10. Drain, then add the butter and black pepper to each pan and mash until smooth
  11. Add some plain mash onto the mince mix in the cooking dish and top it off with a layer of sweet potato
  12. Put in the oven on gas mark 4 for about 15-20 until the potato crisps over slightly
  13. Sprinkle chopped coriander on top and serve
