500g turkey thigh mince
2 tbsp olive oil
2 carrots, peeled and diced
2 sticks celery, chopped
1 onion, chopped
1 clove garlic, crushed
150ml red wine
1 x 400g can chopped tomatoes
1 bay leaf
1 sprig fresh thyme
Salt and fresh ground black pepper
500g packet fresh gnocchi
2 tbsp Parmesan cheese, freshly grated
Fresh basil sprigs to garnish

Method
Method
- Heat the oil in a large saucepan. Add the carrots, celery, onion and garlic, cover and allow the vegetables to sweat over a gentle heat for about 10 minutes, stirring occasionally.
- Increase the heat slightly and add the turkey mince in batches, frying until lightly browned. Add the red wine, bring to the boil and reduce down to a third, uncovered.
- Stir in the chopped tomatoes, bay leaf, thyme and season well with salt and pepper. Cover and simmer for 45 minutes, stirring occasionally.
- Cook the gnocchi in a large pan of lightly salted water according to the packet instructions. Drain well and stir into the cooked bolognese sauce. Sprinkle with Parmesan cheese and garnish with sprigs of basil and serve with garlic bread.
