500g Turkey breast cubed

100g Peas

½ Stick of celery cut into medium sized pieces and celery leaves

1 Large onion cut into quarters

2 Leeks cut into large pieces

3 Carrots peeled and cut lengthways and cut into chunky pieces

1 Litre stock made with 2 stock cubes

1 dessert spoon of Cornflour and water to mix

Splash of double cream
To serve

New potatoes and seasonal vegetables.
Method Method
  1. Add the carrots, celery, onion to the pan with the stock and simmer for 10 minutes.
  2. Add the leeks and simmer for another 10 minutes.
  3. Add the turkey and for a further 5 minutes turning the heat up a little so it’s almost boiling.
  4. Thicken the stock with the cornflour and water mix, slowly stirring it in.
  5. Add the celery leaves and peas and simmer for a couple of minutes.
  6. Use parsley to garnish.
