1 Kilo turkey breast or thigh, cubed

1 Litre of stock made with 2 stock cubes

3 Large leeks, chopped

1 dessert spoon of Cornflour and water to mix

Splash of double cream

½ Kilo short-crust pastry

1 Egg for the glaze

New potatoes and seasonal vegetables.
Method Method
  1. Cook the chopped leeks in the stock for five minutesAdd the cubed turkey to the stock and poach, bringing the water to the boil.
  2. Mix the cornflour with water and add the cream.
  3. Spoon the poached turkey and leeks into a pie dish.
  4. Brush the egg wash under the rim of the rim of the pie dish.
  5. Hang the rolled out pastry over the top of the pie dish and cut off excess pastry.
  6. Brush the top of the pastry with the egg wash.
  7. Place in the oven for 25/30 mins at 200 degrees Celsius.
  8. Re-glaze the pie with clarified butter when it comes out of the oven.
