Turkey and cheesey courgette meatballs
Essential Ingredient:
Turkey Mince
For the turkey meatballs:

1 small onion, finely chopped

2 garlic cloves, crushed

2 tbsp vegetable oil

1 small courgette, grated

500g turkey mince

Breadcrumbs from 1 slice of brown bread

1 tsp paprika

1 tsp turmeric

1 tsp cumin

1/2 tsp chilli flakes

1 tsp garlic powder

1/4 tsp ground black pepper

Pinch of salt

1 egg

40g grated cheddar cheese

For the tomato sauce:

1/2 onion, finely chopped

Garlic cloves, crushed

Tin of chopped tomatoes

2 tsp sugar

1 tsp oregano

A glug of olive oil

To serve:
Serve with a warm pitta.
This turkey recipe from Happy homebird is ready in 30 mins.
  1. Gently fry the onions and garlic with vegetable oil
  2. Meanwhile grate the courgette
  3. In a large bowl mix together turkey mince,courgette and breadcrumbs
  4. Add all the spices and the garlic powder
  5. Add the egg and the grated cheese, mix together
  6. Add half of the sautéed onions and garlic, mix
  7. Form the mixture into small balls and place on a baking tray
  8. Heat the oil and fry the meat balls for 15 minutes, browning on all sides
  9. Whilst the turkey meatballs are cooking make some tomato sauce
  10. Using the rest of the sautéed onions and garlic, add the chopped tomatoes
  11. Bring to a simmer
  12. Add the sugar, oregano and a glug of olive oil
  13. Serve the sauce with the turkey meatballs and a warm pitta.
