Smokey turkey pizza
This recipe was sent to us by Ali, one of our online blogger mums. Her challenge was to cook a pizza or pasta meal using turkey. Here's what she thought:

What we thought:
At Over a Cuppa we like turkey. I like it because it is leaner than chicken and sometimes can be cheaper to buy. Both Bex and Oscar love it and Cam my husband after years of not being a turkey fan has come around to liking it now. 
Essential Ingredient:
Turkey Steaks
Ingredients
For this smokey turkey pizza you will need:

2 pizza bases

or make up two homemade pizza bases with:

300g Strong bread flour

1 tsp of instant yeast

1 tsp salt

2 tbls of olive oil

200 ml of warm water

For the basic tomato pizza topping you need:

4 tbls of tomato puree

1 tbls of olive oil

a little salt

freshly ground black pepper

1 tsp of sugar

2 garlic cloves crushed

A handful of fresh basil very finely torn or 1 tsp dried

For the topping you will need:

250g – 350g Turkey steaks thinly sliced.

2 – 3 garlic cloves crushed

2 tsp of smoked paprika

Olive oil

Juice of half a lemon

2 onions red or white – peeled, then halved and thinly sliced.

1 green pepper diced

1 ball of mozzeralla cheese 125g in weight.

a little bit of grated cheddar as an optional cheesy extra

Seasoning






To serve:
With crusty garlic bread.
This pizza is great for using turkey leftovers.
Method
  1. To make the pizza dough:
  2. Put the bread flour into a bowl with the yeast and salt then mix.
  3. Make a well in the middle and slowly pour in the water and olive oil.
  4. Mix together with a wooden spoon until soft and slightly damp dough.
  5. Knead for five to ten minutes on a floured surface then set aside and cover with a tea towel.
  6. Leave for about an hour until it is doubled in size.
  7. Once the hour is up, knead it again for another five minutes.
  8. On a floured surface roll out the dough with a rolling-pin. Go really thin if you want thin and crispy as is does rise in the oven.
  9. Place on a floured baking tray ready for topping.
  10. For the tomato pizza topping
  11. Simply mix all the pizza topping ingredients together.
  12. For the pizza topping
  13. Put the turkey in a bowl. Drizzle a little olive oil over and add the crushed garlic, lemon juice and smoked paprika. Mix well and leave to marinade. You can leave it while the pizza dough is rising even a 30 minute marinade will add lovely flavours to the turkey.
  14. Heat a little olive oil in a frying pan and cook the turkey until cooked.
  15. To assemble the pizza
  16. Smooth your tomato paste over the base.
  17. Cover with a layer of onions, then top with the turkey and pepper pieces.
  18. Finish off with slices of mozzarella torn into pieces and a sprinkling of cheddar cheese if using.
  19. Add a good grind of black pepper and you're ready to put in a pre-heated oven at 240ºC for 10-12 minutes or until fully cooked.
  20. Once cooked add a few torn basil leaves for it's final finish if you like.
