Mediterranean Stuffed Turkey Parcels
Essential Ingredient:
Turkey Breast Fillets
Per person:

1 turkey fillet

2 slices of chorizo

1 slice of goat's cheese

2 cherry tomatoes

To share over several portions :

A couple of cups of breadcrumbs


Salt & pepper

1/2 cup parmesan

1 egg, beaten

To serve:
Serve with rice and salad.
This turkey recipe from Madhouse family reviews is really flexible.
  1. Preheat the oven at 180°C. Cut a slice of goat's cheese and 2 slices of chorizo for each person
  2. Cut the chorizo into small pieces, put it in a bowl and add the chopped cherry tomatoes
  3. Put the breadcrumbs in a bowl, add the parmesan, some oregano, salt and pepper and mix with your fingers. In a separate bowl, crack and quickly whisk up an egg. Sort out a workstation with all the bowls lined up, an empty plate to work on the turkey parcel and an oven proof dish or roasting tin at the end
  4. On a plate, lay out a turkey fillet. In the middle, place a slice of goat's cheese and a little pile of chorizo and cherry tomato pieces. Fold over the edges (don't worry if it doesn't look very even or totally sealed, it doesn't seem to matter)
  5. Gently roll the parcel in the bowl of egg, then the bowl of seasoned breadcrumbs and place it in a roasting tin. Bake for 20-25 minutes until cooked through. If you want it to go golden brown, you could put the grill on for the last couple of minutes
