Coronation turkey picnic rolls
This recipe was sent to us by Ren Behan, one of our online blogger mums. Her challenge was to cook a kids picnic meal using turkey. Here's what she thought:
What we thought:
Ever since eating a steaming hot jacket potato recently in a Welsh café, topped with coronation chicken, I’ve been making my own version at home. The kids love it too. 
Essential Ingredient:
Turkey leftovers
100g roast turkey breast slices

3 tbsp light mayonnaise

1.5 tsp mild curry powder

50g raisins

Half a fresh mango

Lettuce leaves

4 oaten rolls

Butter (optional)

To serve:
Serve with all your usual picnic favourites.
This turkey recipe is great for wraps too.
  1. Chop the turkey into small pieces (you can use any leftover turkey or turkey slices) and put them into a bowl
  2. Add in the mayonnaise, curry powder and raisins
  3. Carefully peel and chop the mango (half will be enough) and add that in. Mix everything together well
  4. Take four bread rolls, spread with butter (optional) and place one large lettuce leaf in each roll
  5. Fill the rolls with the coronation turkey mix and pack for your picnic or eat.
